Pad See Ew

Pad means stir fry & See Ew is soy sauce; this iconic dish literally means soy sauce stir fry and is one of the most popular Thai street foods

Although I’m using chicken you can use any protein or meat alternative you like

One of the distinct appeals of this dish is the use of rice noodles(especially fat/wide ones) because they bring a chewiness that regular noodles don’t have

Inexpensive, fast, and tasty. Three things we all look for in a great meal

Tips/Notes/Substitutions⁣
*If you can’t find wide rice noodles, any rice noodle will work. Soak in cold water until soft or overnight to use🚿⁣
*I brined the chicken with 5% salt and a splash of fish sauce but totally optional. You can marinate it with just S&P, any Asian seasoning, or the extra sauce
*Can sub Gai Lan for broccoli, rapini, or fav green vegetable
*Can sub vinegar for lime juice
*If your noodles are dry/sticking to the pan, add 1-2 splashes of water to moisten it up

There’s going to be extra sauce! Use it as a seasoning or as a dip/marinade

The majority of the calories come from the rice noodles so have fewer rice noodles or use a Shirataki noodle if you’re looking for a lower-carb version

Ingredients

  • 125g Dried Wide Rice Noodles (250g Soaked noodles)

  • 6oz Boneless Skinless Chicken Breast Sliced Thinly *

  • 1 Cup Gai Lan/Chinese Broccoli*⁣

  • 2 Garlic Cloves⁣

  • 2 1/2 Tbsp Dark Soy⁣

  • 1 Tbsp Oyster Sauce⁣

  • 1 Tbsp White Vinegar*⁣

  • 2 Tsp Sweetener (1:1 Stevia/Splenda)⁣

  • 2 Tbsp Chicken Broth⁣

  • Pinch MSG, Salt/Pepper to taste⁣

Directions

  • Add oyster sauce, dark soy sauce, vinegar, chicken broth, and sweetener to a bowl and mix
  • Stir fry the chicken and Chinese broccoli in separate batches until it is about 90% cooked, and set aside
  • Add some more oil to the pan and stir fry your rice noodles and garlic before adding in 3/4 of the sauce
  • Continue cooking until the noodles are soft and add back the chicken and Chinese broccoli and give it a quick toss together
  • Once everything is coated, serve and enjoy
