The Dish
“4 Cheese & Ferment Scrambled Eggs”: 3 Ferment Custard Eggs, Powdered Cheese Sautéed Mushrooms, Cheddar, Mozzarella & Parmigiano
Primary Inspiration
- Bayashi and I both care about fitness—he follows a no carb/keto diet and was a personal trainer and Abercrombie & Fitch model before COVID.
- To stay true to his content, I also matched his signature editing style in the video for this dish.
Secondary Inspiration
- Bayashi lives above a grocery store and doesn’t store much food, so I worked with what was left in his fridge—especially three eggs from a recent shoot.
- I used a low-heat, risotto-style technique for the scrambled eggs, inspired by Gordon Ramsay, to create a custard-like, spoonable texture.
- Bayashi loves cheese, and his fridge had plenty. I leaned into that with a 4-cheese mix.
- To celebrate his Japanese heritage, I incorporated three ferments into the eggs: ssamjang, mirin, and shoyu—reflecting Japan’s love of fermented flavors.
