“4 Cheese & Ferment Scrambled Eggs”
3 Ferment Custard Eggs, Powdered Cheese Sautéed Mushrooms, Cheddar, Mozzarella & Parmigiano
PRIMARY INSPO
-Bayashi & I share an interest in fitness & he told me he actually follows a no carb/keto diet. He use to be a personal trainer before covid & also worked as a model for Abercrombie & Finch. I wanted to make a dish that aligned with his diet.
-Bayashi has a signature style of video editing so I wanted to stay true to it in the editing
SECONDARY INSPO
-Because he lives on top of a grocery store; he doesn’t keep anything in his fridge & buys what he needs to shoot videos or to eat. So his fridge was fairly bare w/ leftovers from a shoot but I wanted to try to elevate them including his 3 eggs. One of the best ways to cook the most luscious scrambled eggs is like a risotto. It’s actually been made famous by @gordonramsay . By starting the eggs in an almost cold pan & cooking it over low heat while stirring like a risotto creates really custardy eggs that form into small curds. The eggs are spoonable & melts in your mouth but aren’t runny making it great to eat with something crispy like nori snacks
-Bayashi loves cheese & it was abundant in his fridge. He also loves making cheese based recipes
-I wanted to add in Bayashi’s Japanese heritage so in the eggs I used 3 types of ferments; Ssamjang(not Japanese but he loves Korean flavors & it’s similar in taste to miso), Mirin & Shoyu. Japan is the land of fermentation & these flavors have shaped the flavor profile of Japans cuisine.
