PRIMARY INSPO
-Priyanka is well known in the vegan community as well as an advocate for “no waste movement” in cooking. I wanted to make a dish that was vegan & utilize ingredients in creative ways to bring inspiration for their uses
-She is a super bold & vibrant person; whether it is from her culture, her personality or her fashion sense so I wanted to show that in the colours & in the flavors
SECONDARY INSPO
-Her cultural background really helped in my flavoring but also in drawing inspiration from dishes that she is familiar with such as “pakora & chutney” & putting a creative spin on it
-I don’t use many vegan products & I know Priyanka has many that she enjoys & are “good” so it was fun for me to play with those ingredients such as vegan eggs, vegan chicken nuggets & vegan cheeses.
