Primary Inspiration
What began as Gui’s passion project—Humans of Wagyu—has grown into a platform celebrating Japan’s Wagyu farmers. I wanted to reflect that mission by presenting Wagyu beyond a simple sear, and reinterpret his signature Gui’s Burger in a fine dining format.
His restaurant, Gui’s Burger, features only Wagyu and made it onto Japan’s Top 100 Burgers list. I recreated his burger with every component made from Wagyu—high brow meets low brow, but all premium.
Secondary Inspiration
This dish features standout Japanese ingredients: A5 Wagyu, Japan’s sweetest Aomori garlic, house-made brioche, Wagyu milk and fat, and even vitamin C drinks as the acid. I wanted to celebrate these premium elements and surprise Gui with new interpretations—like turning vitamin drinks into a citrus component.
