THE DISH:
Miss Vickie’s French Toast
Spiced Coconut Custard
Jalapeno Ginger Grape Chutney

PRIMARY INSPO
-Bilal is a big Miss Vickie’s chip fan & specifically the Jalapeno flavor. I wanted to make sure I used that as a key ingredient & inspiration for the dish
-Bilal is Pakistani & has always championed sharing his culture through his videos including involving his mom (who is so lovely & she couldn’t stop smiling as she told me how proud she was of him) so I wanted to make a dish that involved some spices of Pakistani cuisine 

SECONDARY INSPO
-Pakistani cuisine is robust & aromatic. They know how to make strong flavors shine yet balance each other. I wanted to play with big flavors like jalapeno, ginger, cinnamon & maple syrup in a cohesive fun sweet & savoury dish but taste & look wise (making the french toast look like a hash brown for example)
-Bilal practices juijitsu so I wanted to make a dish that would be a great post workout meal as it has high protein from the greek yogurt but also fast digesting carbs from the grapes & maple syrup which help with triggering muscle building better after a workout 
-We always see Bilal sharing very humble dishes from around the world. We rarely see him in a restaurant setting so I wanted to create a dish elevating humble ingredients so that he felt like he was in a restaurant
