-Chef Hiro is known to create some of the tastiest sushi & Japanese seafood dishes on the internet; I wanted to use his beautiful ingredients and showcase them in a way that isn’t common or traditional at a Japanese sushi restaurant but still felt Japanese⁣

-Chef Hiro runs Sushi Take; a traditional sushi restaurant; I wanted to create a dish that could be potentially served to his guests ⁣
-I asked Chef Hiro what his life goal is and he said I’m living it because all he wants to do is make people happy through sushi. I wanted to use this inspiration to create a dish that was colorful, playful & makes you happy through presentation& taste⁣
-I wanted to cook an ingredient “two ways” because I learned & loved how Chef Hiro not only has the professional fun Chef side but he is also an incredible Father as well as businessman. I created this burger to pay homage to @humansofwagyu passion for wagyu & the farmers along with highlighting the Japanese ingredients with my Canadian & knife skill’s touch. ⁣
⁣
BURGER BREAKDOWN⁣
-Each burger patty is hand chopped daily & made in small batches. Once sold out daily, it’s sold out for the day.⁣
-Special blend of 3 A5 Wagyu cuts from different farmers. We created this blend to have the best flavor, texture & umami⁣
-Everything is cooked in the umami wagyu fat (kombu & shiitake mushrooms)to make sure everything has an umami boost⁣
-Maitake are one of the kings of mushrooms in Japan; the perfect match for the king of beef because of its flavor & meatiness⁣
-The components in this burger uses ingredients the wagyu are raised & fed on(whiskey, soy, koji, rice)⁣
-The Maple Whiskey glaze & pickles have a deep sweet umami to them thanks to the shio koji. It makes both components extra “craveable” because of how much umami it has⁣
-The whole burger is a party of salty, sweet, savoury, umami, tangy, meaty & juicy. ⁣

I’ve been waiting to come back on @foodnetworkca Top Chef Canada ever since I left my season as a finalist.⁣
⁣
I’m so excited to be back as a Guest Judge on Episode 2 for tonight’s S11 episode “Firsts”!!! ⁣
⁣

Being on #TopChefCanada was of the most memorable & pivotal moments in my career. ⁣
⁣
At that time I left working in restaurants for 8 years but applied because I wanted to compete & show that you don’t have to be a chef in a restaurant to be a chef let alone a Top Chef. ⁣
⁣
I remember every interview process involved me convincing & proving that I should be on the show. I remember the first few episodes I wasn’t taken serious because I was “Six Pack Chef”, I dressed different(wore shorts & rocked Jordans) & I really haven’t build a name amongst the industry… All fair points. ⁣
⁣
So when I got accepted, I loved being given the opportunity to prove myself through my cooking, my food, my story; through Me. ⁣
⁣
After being a finalist on that show, it felt so good to have people realize that I can “cook COOK” & one of the best compliments I ever got was when someone watched the show & messaged “it’s so cool to watch you do your thing on TV & to do it being you. Who you were on the show is who you are in person & that’s pretty f’n cool”⁣

I can’t thank Top Chef Canada enough for taking the ⁣
chance on me & letting me be part of the most prestigious cooking competition show in Canada!⁣

Episode 2 Breakdown:⁣
It’s going to be the season’s first Quickfire Challenge & the Chefs will go back to basics in this very special Skills Race, featuring Guinness World Record Holder & former Top Chef Canada finalist Wallace Wong. Later, while cooking at Judge @JanetZuccarini first restaurant @nervosato, the Chefs showcase their unique culinary styles by creating a dish inspired by a major “first” in their life. ⁣

It’s open until 6am & one of my fav parts is that they have grated garlic paste, chilli oil, 2 kinds of seaweed, umeboshi paste, soy sauce, vinegar & Japanese mustard for you to add to your ramen to customize to your taste.⁣

Iykyk… these kinds of meals post going out always taste amazing but in Japan… it hits different different! ⁣

FRIDGE FREESTYLN’ EP.21 @humansofwagyu @meetyourwagyu⁣ ⁣ THE DISH:⁣ “Wagyu Burger” Tartar⁣ -Tokoshima A5 Wagyu Tartare⁣ -Miso Mustard Brioche Puree⁣ -Wagyu Garlic Confit Hollandaise⁣ -Shoyu Aomori Garlic ⁣ -Cheese Crisp⁣ ⁣ PRIMARY INSPO⁣ -What started as a passion for Wagyu as a fan led to Gui creating a social media page Humans of Wagyu that became a source for those looking & also a platform to showcase & highlight Japans Wagyu farmers. I wanted to create a dish that would showcase & highlight Wagyu in a way that’s more than just simply cooked/seared & also share & highlight Gui’s Burger & his love for wagyu⁣ -Humans Of Wagyu led to Gui starting Gui’s Burger restaurant. The restaurant does one thing only; a Wagyu burger that’s on Japans Top 100 Burgers list. I wanted to take his signature burger & recreate it in a fine dining way. High brow/low brow - not just the dish but the actually recipe of a burger being made with only wagyu including the sauces & condiments ⁣ ⁣ SECONDARY INSPO⁣ -The ingredients here are the star in every way. It’s using the best Wagyu(A5), the most sweetest garlic in Japan called Aomori, wagyu milk, wagyu fat, brioche buns made daily for the restaurant around the corner, the wasabi spray . Wagyu Katsu Sando⁣
Serves 2⁣
🔵200g/7oz Wagyu Ribeye or Sirloin (it should be shaped to match the bread’s shape)⁣
🔵1/2 cup All purpose flour⁣
🔵2 large eggs, beaten⁣
🔵1 cup Panko bread crumbs⁣
🔵1 tbsp Katsu sauce⁣
🔵2 slices Shokupan,Japanese Milk Bread⁣
🔵Wagyu Fat, for frying (can use vegetable oil also)⁣
⁣
Katsu Sauce⁣
🔵1/4 cup Ketchup⁣
🔵2 tbsp Worcestershire sauce⁣
🔵1 tbsp Oyster Sauce⁣
🔵1/2 tbsp Sugar⁣
⁣
Directions⁣
🔵 Coat the wagyu in flour, dip in beaten eggs & finally coat evenly with Panko bread crumbs⁣
🔵 Heat the Wagyu fat in a fryer or deep pan to 180°C (356°F). Fry the breaded beef for 3-4 minutes or until golden brown and crispy. Let it rest for 5 minutes⁣
🔵Brush the milk bread slices with wagyu fat, then toast until golden brown⁣
🔵Brush katsu sauce on one side of both bread slices⁣
🔵Add the wagyu katsu, top with the second slice of bread & enjoy ⁣

PRIMARY INSPO⁣
-Bilal is a big Mrs Vickie’s chip fan & specifically the Jalapeno flavor. I wanted to make sure I used that as a key ingredient & inspiration for the dish⁣
-Bilal is Pakistani & has always championed sharing his culture through his videos including involving his mom (who is so lovely & she couldn’t stop smiling as she told me how proud she was of him) so I wanted to make a dish that involved some spices of Pakistani cuisine ⁣

SECONDARY INSPO⁣
-Pakistani cuisine is robust & aromatic. They know how to make strong flavors shine yet balance each other. I wanted to play with big flavors like jalapeno, ginger, cinnamon & maple syrup in a cohesive fun sweet & savoury dish but taste & look wise (making the french toast look like a hash brown for example)⁣
-Bilal practices juijitsu so I wanted to make a dish that would be a great post workout meal as it has high protein from the greek yogurt but also fast digesting carbs from the grapes & maple syrup which help with triggering muscle building better after a workout ⁣
-We always see Bilal sharing very humble dishes from around the world. We rarely see him in a restaurant setting so I wanted to create a dish elevating humble ingredients so that he felt like he was in a restaurant⁣

I wanted to make sure I used that as a key ingredient & inspiration for the dish⁣ -Bilal is Pakistani & has always championed sharing his culture through his videos including involving his mom (who is so lovely & she couldn’t stop smiling as she told me how proud she was of him) so I wanted to make a dish that involved some spices of Pakistani cuisine ⁣ ⁣ SECONDARY INSPO⁣ -Pakistani cuisine is robust & aromatic. They know how to make strong flavors shine yet balance each other. I wanted to play with big flavors like jalapeno, ginger, cinnamon & maple syrup in a cohesive fun sweet & savoury dish but taste & look wise (making the french toast look like a hash brown for example)⁣ -Bilal practices juijitsu so I wanted to make a dish that would be a great post workout meal as it has high protein from the greek yogurt but also fast digesting carbs from the grapes & maple syrup which help with triggering muscle building better after a workout ⁣ -We always see Bilal sharing very humble dishes from around the world. Guinness World Records 2025 70th Edition🌎📚⁣

I think every person has a memory associated with GWR specifically the book! ⁣
⁣
For me it was flipping through the Scholastic pamphlets in school as a kid to order the book & then reading the books in libraries or book fairs. ⁣
⁣
It’s pretty damn cool & epic to see me being in THE book! I know childhood Wallace wouldn’t believe it.⁣
⁣
The 2025 Edition is a special one because it celebrates 70 years of the book being published; that’s a lot of incredible records! ⁣

For this edition over 57,000 records were submitted with only 2115 being put into the book… & I’m one of them; let me do the math:⁣
