  • Preheat your oven to 450F degrees
  • On a parchment-lined baking tray, add your carrots, oil, salt, and pepper
  • Give it a quick mix before roasting it in the oven for 20 minutes, flipping and mixing at the 10 minute mark
  • Meanwhile, mix honey, chipotle, pepper, and garlic powder to make a simple glaze
  • Separately, mix yogurt, dill, lime, and a pinch of salt to make a bright and creamy sauce
  • Once the carrots are roasted, toss them with the honey glaze while they are still hot to combine
  • To serve, add the yogurt mixture on a plate and add the carrots over it
