The Caprese Salad is the iconic Italian dish of tomato, mozzarella and basil. I’ve always loved this salad and I wanted to show you how one dish can inspire another dish but still be the same✨
I’ve taken all the components/flavor profiles of the Italian version and substituted it with Asian ingredients🥢
Here are some “swaps” I made
– Black Vinegar – Balsamic
– Silken Tofu – Mozzarella
– Shisho & Thai Basil – Basil
Method
-Mix black vinegar, sweetener, chili, pickled ginger, garlic, and salt
-In a bowl toss the tomatoes, onion, and dressing and let marinate for 30 minutes in the fridge
-Arrange the tomatoes in a bowl/plate and spoon the silken tofu into the cracks/crevices and season with salt
-Add some extra dressing, finish with green onion basil oil, and top with the fresh herbs
Key Tips:
-Use this method for any recipe experimenting to see what works using similarities in ingredients as your guide
-Try with other sweeteners like honey, agave, or maple syrup
-Use different kinds of vinegar like rice or cane vinegar for a whole new experience
-You can buy pickled ginger from your fav sushi spot but most stores have in the Asian/International aisle

Ingredients
4 Vine Tomato, cut into quarters/irregular shapes
1/2 cup Cherry Tomatoes, halved
1/2 Small Red Onion, thinly sliced
1/4 cup Black Vinegar
1 tsp Sweetener
1 Red Chilli, thinly sliced
1 Clove Garlic, finely minced/grated
1 tsp Pickled Ginger, finely minced/grated
1/2 cup Silken Tofu
Shisho, Coriander & Mint
Salt to taste

Directions
- Start by cutting some tomatoes into wedges, as well as regular shapes
- Cut up some sweet red onions
- In a bowl add black vinegar, sweetener, and sliced red chillis
- To make this dressing special, add minced ginger, a clove of minced garlic, and a good pinch of salt
- Give your dressing a good mix and add to your tomatoes and onions
- Allow it to marinate for at least 30 minutes in the fridge
- Spoon your tomatoes organically onto a plate
- Spoon some chunks of the silken tofu onto the tomatoes and season it well with some salt
- Add more of the dressing and for some flavor and color, a little bit of green onion basil oil (optional), you can also use any olive oil or seed oil like sesame or pumpkin oil
- Finish with fresh herbs and enjoy
