If you love Vietnamese food, you definitely have had this popular dipping sauce, and the flavors
First things first, Nuoc Cham and Nuoc Mam are not the same things
Nuoc Cham in its simplest form is a mixture of water, sugar, lime juice, and fish sauce! It’s the generic term for sauce
Nuoc Mam is the most popular type of Nuoc Cham and is why I love Vietnamese food; pungent, sweet, sour, spicy, and packed with umami
Every Vietnamese and South East Asian family has their own version and will proudly tell you it’s the “Best Recipe”. Some people use lime juice, some use vinegar, some use coconut water and others swear to use only one specific fish sauce
However, they all usually include sugar and a lot of it! That’s why I created my version here using my go-to sweetener blend of 1:1 Splenda and Stevia
This way I get to enjoy this delicious sauce without worrying about the calories/carbs and now you can too
I even dare say it’s just as good as any OG recipe
Makes ~1.5 Cups
Serve this with your favorite meats and seafood, rice or noodles, as a dipping sauce for appetizers, vegetables or as a salad dressing. It also makes for a great marinade!

Ingredients
1 cup Water
2 Tbsp Sweetener
1/2 cup Lime Juice
2 Garlic Cloves, finely chopped
2 Thai Red Chillies, finely chopped
1/4 cup Fish Sauce
Adjust seasoning to your taste!
Directions
- In a bowl, start by mixing water, sweetener, lime juice, garlic, chili, and fish sauce
- Mix to dissolve the sweetener and taste to adjust the seasoning to how you like it
