And this is her favorite dish, sweet and sour pork
She is the mother to 4 children, grandmother to 5 grandchildren, and great-grandmother to 3 great-grandchildren.
She raised me and growing up she taught me so much of the morals and ethics that I have today.
She taught me to care, to be kind, to love, to be selfless, and to treat everyone with respect. She taught me to be tenacious, to be determined, and to work…really really hard.
She always put everyone else before herself and made sure to make everyone feel like they were family.
Just like this dish, everyone from kids to adults loved her.
She had the perfect balance of sweet & sour, a personality like the different textures and shapes, and just like how colorful and happy this dish looks, her smile and laugh would brighten up anyone’s day.

Ingredients
- Pork & Marinade
1/2 lb pork spare ribs or pork shoulder (cut into 1 inch pieces)
1 tsp Soy Sauce
1 tsp Cornstarch
1 Whole Egg
Cornstarch to coat
- Sauce
1/3 cup Ketchup
1/3 cup Sugar
1/4 cup White Vinegar
1 tsp Cornstarch
- Vegetable
1/2 cup Bell Peppers
2/3 cup Pineapple
1/4 cup Red Onion
Directions
- Mix your pork with cornstarch, soy sauce, and whole egg until combined and coated.
- Let marinade for at least 15 minutes and up to overnight
- In a large bowl, coat the pork with cornstarch to get an even coating.
- Heat up a large pot or pan with neutral frying oil to 350F/176C. Test the oil temperature by sticking a chopstick or fork coated with some cornstarch into the oil. If it sizzles and fries immediately but does not turn dark brown right away that is good to fry
- Fry your pork pieces in small batches at a time for 6-8 minutes. Remove and place on a paper-lined tray and continue frying until all the pork is fried.
- In a large bowl mix the ketchup, sugar, white vinegar, and cornstarch together.
- In a large pan over medium-high heat, add some neutral cooking oil and sauté all the bell peppers, pineapple, and red onion for 2-3 minutes to soften and set aside
- In the same pan, on medium heat add your sweet & sour sauce and bring to a simmer. Add in the fried pork along with the sautéed vegetables and cook for 2-3 minutes stirring the make sure all the ingredients are coated with the sauce
- Serve and enjoy
